Today I've been approached by CSN Stores to conduct a product review. I was delighted since they have such a wide selection of beautiful bakeware and kitchen tools. They actually carry everything from dining room furniture to stand mixers. They also carry a lovely collection of Le Creuset and Emile Henry stoneware, including pie dishes, that come in an array of striking colours. The review will come shortly, so stay tuned...
The dessert that I present to you today, however, is quite rustic and does not require any sort of tart pan or dish. Sounds easy, right? True.
If you are not familiar with a Crostata, then you can think of it as a free-form pie. Traditionally, it is a type of Italian tart or pie that is easy to make and doesn't require much pampering. The pastry is rolled out on a flat surface and the edges are simply folded over one another toward the center to contain the filling. The finished dessert is then baked on a flat cookie sheet until golden brown.
Yes, I know...I'm still at it - there are peaches all over this blog! They're taking over. But, I think they absolutely deserve the attention since they only get to steal the spotlight one month out of the year. Don't be greedy, give them some love.
This Rustic Peach & Ricotta Crostata is a perfect dessert to make when you have last minute guests since it is fast and simple. The ricotta filling is satisfying yet light, making it perfect for the summertime. If you have any Spiced Peach Jam left over from last week, well....here's another great way to use it.
Want to know something else that is great about this dessert? It makes a perfect breakfast. Absolutely.
Cut out a slice, wrap it up in a napkin, and BAM! Instant hand-held pie.
The ricotta cheese is low in fat and high in protein too so you can't go wrong. Once you consider the fruit on top then you basically have another form of "yogurt and fruit" all nestled in a flaky pie crust. Are you drooling yet? Don't worry, that's normal.
